Secret Smokehouse founder, Max, hails from the west coast of Scotland, where he began smoking fish at a young age. Since then he has moved to Stepney, built his own smoker, and set up the Secret Smokehouse from a shed in 2015. He now produces RSPCA high welfare certified PGI status ‘London Cure Smoked Salmon’, trout, haddock, kippers to London's top chefs and restaurants-all smoked, cured, filleted and packed by hand, under the arches by London Fields.
