Take one oak thinning, inoculate it with shitake mushrooms, then mature it for up to 24 months—and voila! You have a mushroom log. Sourced from Oak Farm in the heart of the Waveney Valley, the logs at the eponymous Mushroom Log stall are sold ‘ready to fruit’—meaning they will start producing shiitake mushroom crops in the next few months and will continue to produce one to four crops a year for up to five years. All the logs are sustainably sourced, and grown in England. They just need a shady, damp spot in the garden and regular rainfall or watering.
