Fabien Joly and Florent Gacon  are a couple of young Franc-Comtois, with a passion for food, wine and the artisan traditions of their native region of France.  They come from a long line of famers and craftsmen who have been producing food and running market stalls for generations, and now they are bringing the flavours of the mountains to Borough Market.

Their range includes the slow smoked Saucisse de Morteau, a delicious amber coloured pork sausage made following a traditional method that can be traced back to the16th century.  Comte and Mont D’Or are amongst their cheeses on offer.  But look out for Cancoillotte, which is a very specialised, little known runny cheese that is believed to have been produced as part of the butter making process in the region for over 2000 areas.  Served hot or cold, flavoured with champagne, garlic Vin Jaune or walnuts, it is something to be experienced.
