Sussex Fish Demonstration Kitchen

Resident chef Hayley Edwards has teamed up with Sussex Fish to create a selection of delicious dishes to showcase the catch of the day, which will not only taste great but also help you top up your Omega 3. Hayley's menu includes:
Octopus Hvar

This salad is perfect for all seafood lovers, and a very popular dish in the Croatian island of Hvar.

Huss and red wine casserole
Huss is very similar to Monkfish and with its full-bodied texture is perfect for a Casserole.

Roasted monkfish with bacon
Monkfish is well known for being a very firm and meaty fish and works well with the crisp texture of bacon.
