Roast Demonstration Kitchen

Roast is one of the Market's post popular restaurants, serving classic British dishes with an elegant, modern twist. In this Demonstration Kitchen, we'll be joined by head cook Marcus Verberne who'll be cooking some of Roast's most famous dishes. His menu will include:
Pan-fried fillet gurnard with clams in cider and wild boar pancetta
The fish in this dish only takes 5 minutes to cook so it's important to have all of your ingredients ready before you begin.
Key Ingredients:
- Gurnard fillets and clams from Furness Fish and Game
- Wild boar pancetta from Sillfield Farm
- Dry-medium cider from New Forest Cider
Baked Manx Queenies with a chorizo crust
Marcus says: "There are now British producers making fantastic chorizo allowing us to use this very versatile ingredient on our menu at Roast."
Key Ingredients:
- Chorizo from Cannon and Cannon
- Queenies from Furness Fish and Game
- Onion from Turnips
Slow roasted pork belly
Pork belly is always a popular choice and it's hard to beat Roast's delicious version.
Key Ingredients:
- Pork belly from The Ginger Pig
- Onion from Turnips
- CInnamon stick from Spice Mountain
