My vegan hamanstaschen recipe was adapted from one on the Musical Assumptions website. I filled mine with my homemade date paste and strawberry jam.

125g plain flour
3 tbsp olive oil (if olive oil is too strong a flavour for you, try sunflower oil instead)
2-3 tbsp non-dairy milk
1 tbsp vanilla extract
¼ tsp salt
Pre-heat the oven to 175C. Mix all of the ingredients together, then slowly add the milk. Knead the dough for 2 mins, until smooth.
Roll the dough out on a floured countertop of board until thin. Use a mug or glass to make the circles in the dough. It should give you enough for about 15 small hamantaschen or 10 larger ones.
Place 1 tsp of the filling in the middle of the dough and fold each into a triangular shape, pinching the corners closed. Place on a parchment paper-lined tray. Bake in the oven for about 15 mins, until lightly golden. Remove, let cool and enjoy.
