Making History at the Demonstration Kitchen Thursday 2nd February

As we unveil a Southwark Heritage Blue Plaque this week in the Market, marking Borough’s place as the oldest fruit and veg Market in London; our resident chef, Hayley Edwards has been inspired by Britain’s rich culinary heritage. Looking back to one of the original domestic goddesses, Hannah Glasse, Hayley will be faithfully recreating some of her seminal dishes published in The Art of Cookery Made Plain and Easy, first published in 1747.
Born in 1708, Hannah Glasse began work on The Art of Cookery Made Plain and Easy in 1746, publishing it a year later. The book was reprinted within its first year of publication, appeared in 20 editions in the 18th century, and continued to be published until 1843.
Many of her recipes are as interesting today as they were when they first appeared. Our resident chef Hayley Edwards comments that “I love her recipes as they are simple and uncomplicated and completely user friendly, she suggests to her readers that they can use their own judgement, with a little guidance, I like the idea to just throw some parsley over a prepared dish just as home cooks do now.”
Hayley will be showing us how to recreate some of Hannah’s original dishes including a chicken curry using turmeric, pepper and ginger; rabbit with an onion sauce; mutton collops; cauliflower with a truffle sauce; carrots made in the Dutch way; Syllabub and Apple pie.
Sadly we couldn’t recreate some recipes faithfully, as we are unable to source larks in the Market, but we hope you can join us and Hayley between 12-2pm on Thursday 2nd February in the Jubilee Market to enjoy the recreation of some of these very special dishes.
