Nick and Nadia Stokes’ eastern Mediterranean influenced salads and pita made with slow roast goat kid meat are both delicious and address a real concern in the dairy industry.
Nadia grew up in Cyprus where kid regularly featured in the daily diet prepared with the traditional flavours of the region – wild oregano and bay, lemon and olive oil. The meat is relatively unknown in the UK, but widely enjoyed around the world and this encouraged the Stokes to set up Gourmet Goat to develop understanding of this extremely versatile and healthy source of sustainable meat. As demand for goat dairy products has increased in the UK, farmers have expanded their milking herds and consequently are left with greater numbers of billies, for which, until recently, there was little market. This is an opportunity to try it in some fabulous street food and the stall also stocks a range of raw cuts – leg, shoulder, mince, chops and dice – for you to cook at home.
