Italian & Sicilian Demonstration Kitchen

Italian and Sicilian dishes are popular all over the world but some of the best dishes are often overlooked in favour of the more well known, such as lasagne and carbonara. In this Demonstration Kitchen, our chef Hayley cooks up some lesser known Italian and Sicilian dishes.
Pasta al la Norma with Ricotta Salata
This reicpe for pasta with aubergines, tomatoes and salted ricotta was suggested by Joseph and Luigi at Gastronomica.
Key Ingredients:
- Aubergine from Paul Wheeler Fresh Supplies
- Salted ricotta from Gastronomica
- Olive oil from Taste of Sicily
Maiale al Latte
This dish contains pork that has been marinated in white wine overnight which gives the meat a delicious, sharp flavour.
Key Ingredients:
- Pork from Northfield Farm
- Sage leaves from Spice Mountain
- Butter from Real France
Pan-fried Squid with a Chilli Sauce
This recipe was developed by our chef Hayley and is great for a lunch in the sun!
Key Ingredients:
- Squid from Furness Fish and Game
- Chilli and chilli flakes from Spice Mountain
- Tomatoes from The Tomato Stall
