Venture to Borough Market’s Cookhouse, for a morning mastering the art of fermentation with Rachel de Thample of the Market Table.
You'll get to grips with:
Sourdough – all you need to know how to make your own sourdough loaves, take away a pot of sourdough starter and make sourdough pancakes, which we’ll eat honey fermented cherries.
Kombucha – we’ll marry tea from the market with a Kombucha scoby. You’ll get to take home your own jar of fermenting tea, which will include a scoby for you to make future batches.
Kimchi – we’ll make a jar of kimchi using organic seasonal ingredients from the Chegworth Valley Farm and spices from the market.
Summer Fruit Shrubs – mix up your own gut-soothing drinking vinegar using organic summer fruit and honey from the market.

Rachel de Thample is the author of Less Meat, More Veg and Five. She has worked in the kitchens of Marco Pierre White, Heston Blumenthal and Peter Gordon and currently teaches the preserve courses at River Cottage HQ on the Dorset/Devon boarder and Wild Food Cookery at Made in Hackney. Rachel was Head of Fantastic Food for Abel & Cole for nearly 10 years. She lives in Crystal Palace, London, where she has helped set up numerous local food initiatives.
