Demo Kitchen September residency: South Asian Spice Box

Running every Thursday in the Market Hall, Borough Market’s Demonstration Kitchen residencies focus on a particular theme each month. This month: The South Asian Spice Box

It's been such an incredible summer that we can't bear to see it go, that's why we've decided to keep things warm with a South Asian Spice Box themed series of cookery demonstrations at the Demo Kitchen in September. 

Every Thursday throughout the month, a different chef will join us, representing dishes from a specific region of the Indian subcontinent. 

For more details on the chefs, dates and menus, see below. Demos are free to attend with tasters, cooking tips and recipe cards to take home; so come and join us!

Thursday 6th September - 1-2.30pm
Monisha Bharadwaj - South India
Award winning author, food historian and chef, Monisha runs an Indian cookery school in West London. Here she will be cooking dishes from South India including: 

- Lemon Rice
- Salmon Moilee
- Chicken Chettinad
- Green peas thoran
- Ginger Raita

Thursday 13th September - 1-2.30pm
Sumayya Usmani - Pakistani cuisine
Born and raised in Karachi, Pakistan, Sumayya Usmani is an internationally published food writer, author and cookery teacher. She is passionate about the rich culinary heritage of Pakistan, and her writing and teaching are devoted to sharing those distinct flavours and exploring the cultures and traditions that have influenced them. Here she will be cooking dishes from all four corners of the country:

- North: Chitrali mishi black eyed beans, crème fraiche, herbs, black cumin, walnut oil and confit onions 
- South: Saffron nutty rice with crispy fried red onions and turmeric ghee nuts
- East: Lahori style seasonal fish, chickpea and ajwain batter 
- West: Beetroot borani with dried mint, red onions and cumin

Thursday 20th September - 1-2.30pm
Asma Khan - Royal Mughlai dishes
When Asma moved to the UK in 1991, she did not even know how to boil an egg. In 1993, she travelled back to her ancestral kitchens and, over time, learned recipes that had been in her family for four generations.  Asma started Darjeeling Express as a supper club run out of her home, it has since developed into a highly acclaimed restaurant which she runs with a female brigade.  Her menu will include:

- Saffron chicken korma
- kachumbar salad with pulao
- lachedar paratha with aubergine and spiced yogurt

Thursday 27th September - 1-2.30pm
Saliha Mahmood Ahmed - Kashmiri/Indo-Persian 
2017 MasterChef winner Saliha impressed the judges with her Indo-Persian style of cooking. Food was a big part of her childhood where she was heavily influenced by the Kashmiri style cooking of her maternal grandmother and mother. She will be bringing her passion for this style of cuisine to the Demo Kitchen, concluding our month long residency.
