Demo kitchen residencies: LoveBorough @ Christmas

The Christmas residency has arrived at the demonstration kitchen. From November through to the final demo of the year on the 20 December, a selection of fabulous Borough Market chefs with wide ranging expertise will guide your preparations for the holidays.

Whether you are cooking or looking for gifts for Christmas, there will be a session in the residency designed to help you calmly prepare for the festivities, so you can concentrate on your loved ones, as family and friends come together at this important time of year.

From menu planning, creating gifts with the whole family, trying some fabulous native shellfish or mindfully watching waste and making every penny count, join us as we take inspiration from the diversity of global produce on offer from our fantastic traders.

Thursday 2nd November 12.30-2pm
Chetna Makan - Showstopping Christmas desserts

Famed for weaving Indian flavours into her baking, Chetna has a menu of show stopping Christmas desserts that can be made ahead, ready to miraculously appear when your guests are gathered:

Orange and cinnamon eclairs with chocolate sauce

Hazelnut and almond meringue roulade with caramel sauce

Cardamom brownies

Rose and pistachio icecream

Richard Kirkwood - Native seafood dishes for special occasions 

Group head chef of Wright Brothers, Richard Kirkwood will be focusing on lots of techniques for handling shellfish and flat fish to create impressive dishes for Christmas. His menu will include:

Dorset crab on toast

Whole roast brill, leeks and shallots

Scottish lobster mayonnaise, baked potatoes & caviar

Alissa Timoshkina - Edible gifts

It’s party time for our chef this week, join Alissa as she draws on her Russian heritage to create some unusual and delicious presents that will keep until Christmas. Alissa's menu will include:

Christmas pomegranate vodka

Vodka infused with horseradish, garlic and chilli

Festive ferments: baby dill cucumbers and seasonal Russian krauts

Jenny Chandler - Entertaining crowds economically

We think Christmas at Jenny’s must be hard to beat, so we’ve asked her to let us in on some of her secrets for entertaining crowds economically, drawing on her encyclopaedic knowledge of world dishes. It’s always fun in her kitchen, so don’t miss this hugely talented cookery teacher, author and former UN ambassador for the Year of Pulses.

Jenny's menu will include:

Janssons temptation with kale, hazelnut and apple salad

Middle Eastern pilaff with chickpeas, cinnamon and orange 

Keralan egg curry with fresh carrot chutney and flat breads

Luke Mackay - St Andrew's Day

Luke makes a quick return to the kitchen as we celebrate St Andrew’s Day with a Highland Christmas dinner menu. Alongside him we will be launching Borough Market's  chocolate and coffee porter, a fabulous beer brewed by Dan Tapper in collaboration with our experts at The Rake, made from hops grown in the Market Hall;  it’s the perfect Christmas present for lovers of beer and Borough.

Luke's menu will include:

Hot-smoked salmon canape with beetroot and horseradish relish

Scallops with crispy haggis crumb and butter-roast neep puree

Venison wellington

Ginger and oat parfait with Borough chocolate and coffee porter syrup

Roopa Gulati - Christmas spice box

We're thrilled to welcome Roopa back to the demo kitchen where she'll be treating us to an abundance of spiced Christmas delights. Learn how to incorporate Indian spices into your festive cooking and discover the history, heritage and traditions behind her Indian-inspired cocktail snacks.  

Roopa's menu will include:

Tamarind and chilli glazed lamb koftas

Prawn pakoras

Paneer and green pepper pancakes

Tom Hunt - A mindful Christmas

In the finale of our Love Borough Christmas residency, Tom Hunt returns to the demo kitchen to talk about waste and sustainability as we shop and prep this festive season. He'll be cooking dishes with parts of ingredients often ignored or thrown away at this time of year, demonstrating just how delicious they can taste when you know the best ways to cook with them.

Tom's menu will include:

Beetroot leaf Borani - Iranian-style yoghurt and walnut dip

Carrot and fennel top pesto with carrot, fennel and orange salad

Roast cauliflower steaks, crispy leaves and hazelnut sauce
