Demo kitchen: Grouse

The former River Cottage head chef, TV presenter and cookery writer brings his love of the British countryside to Borough with a masterclass featuring the most seasonal of British game, the red grouse.

With plenty of practical tips including how best to roast a grouse and select grouse - young versus old and hung versus fresh - Tim's menu will include:

Fried grouse won tons, dipping sauce 

Hay smoked grouse breasts, chanterelles and blackberries
