Alison Crouch and Elliott John fly to Italy every two months to visit Apennine dairies, where they taste and hand-select the finest parmesan cheese to sell at Borough Market.
Regular suppliers include Caseificio Superchina, a cheese-making cooperative which sits at just under 1000m in the Modenese Appenines, and Azienda Agricola Iris in the tiny hamlet of Rivalto, which has 120 cows and produces just three or four wheels of parmesan a day.
