Vietnamese peanut and mango salad

This is a light but very tasty salad that is great on it's own or served with dumplings or spring rolls.

Ingredients

2 fresh mangoes from Only Organics

1 bunch of mint

1 bunch of coriander

100g of bean sprouts

1 red pepper

2 hot red chillies from Spice Mountain

1 carrot

100g peanuts from Arabica Food & Spice Company

1 red onion

3 spring onions

For the dressing

3 tablespoons of fish sauce

4 tablespoons of soy sauce

Juice of 6 limes

1 tablespoon of rice vinegar

2 tablespoons of brown sugar, or more to taste

1-2 teaspoons of Thai chili sauce

Preparation Method

Finely chop the mint and coriander, set aside.

Julienne the carrot, red pepper, red chilli, onion and spring onion.

Cut mango into strips.

Mix all the salad ingredients together and leave while you make the dressing

Mix together all the dressing ingredients together and stir until the sugar has dissolved.

Add dressing to the salad and serve immediately.
