Bacon and Cabbage Soup

A traditional Irish classic, bacon and cabbage are a match made in comfort food heaven! The saltiness of the bacon and the strong, rustic flavour of the cabbage are compliment eachother perfectly.

Serves 6

Ingredients

50g (2oz) butter from Real France

100g (31/2oz) diced smoked streaky bacon, or lardons from Sillfield Farm

120g (41/2oz) potatoes from Chegworth Valley, peeled and diced

2 garlic cloves, crushed

100g (31/2oz) onions, chopped

300ml (10fl oz) hot stock (chicken or vegetable)

300g (10oz) chopped fresh tomatoes

300g (10oz) cabbage from Only Organics, shredded

Salt and freshly ground black pepper

Preparation Method

Place a heavy-bottomed saucepan over a medium heat.

Add the butter, and when it has melted stir in the smoked bacon, potatoes, garlic and onions.

Cover with a lid and cook for 10 minutes.

Add the stock and tomatoes and bring to the boil.

Tip in the cabbage, reduce the heat and cook for about 5 minutes until all the vegetables are tender.

Season to taste with salt and pepper and serve with buttered chunky bread.
