Sticky saucy passionfruit coconut pudding

This sweet treat is perfect when eaten outdoors during warmer weather. Just imagine you're on a tropical beach!

Serves 4-6

Preparation time 15 minutes

Cooking time 40 minutes

Ingredients

150g self raising flour

250g soft brown sugar

125g desiccated coconut

2 limes, zest and juice from Jock Stark

1 large egg

75ml coconut milk

100g butter, melted 

100ml milk

3 tablespoons cornflour

3 passionfruit from Paul Wheeler (Fresh Supplies) Ltd

Preparation Method

Preheat the oven to 180°C/ gas mark 4. Grease a large ovenproof dish.

Place the flour, 125g of the sugar, coconut and lime zest in to a bowl and stir together well.

Whisk together the egg, coconut milk and butter then stir together with the flour mixture. Pour the batter in to the dish.

Warm the milk with the cornflour until just boiling. Stir in the remaining sugar and lime juice and also the seedy pulp of the passionfruit.

Pour over the pudding batter and get into the oven directly. Bake for 50 minutes.

Serve with some lovely cold cream.
